It is very hard for me to say no to cakes and chocolate. Unfortunately, I gained some weight. So I decided to take a little break from all of my beloved sweet treats. Just for a while. To be honest I not sure how long I can stand it. Today I had a vegan potato salad. And because I am sick right now. Which means I have to stay in bed and I am bored to death. So I had the time to write a new blog post. Here is the recipe for this quick vegan potato salad.
Ingredients (serves 2)
Peel and dice potatoes into little cubes and let them cook for 15 minutes till they are softened. Peel and slice onion. Put a saucepan on a medium heat and add oil. Add onion and let them cook for 2 minutes. Add vegetable stock, mustard, agave and balsamic. Let the sauce cook for 1 minute. Then, season with salt and pepper.
Mix sauce with potatoes. Peel and dice the apple. Dice the cucumber and add apple and cucumber to the potatoes. Stir well. Let the salad rest for an hour.
