Autumn is the time for pumpkin. I love pumkkin. It makes everything taste a little bit better. You can use pumpkin to make very delicious cakes. Pumpkin gives a cake a very smooth texture and and a little bit of butter flavour. This time I made a very simple vegan pumpkin pie. If you like you can top this pie with a delicious frosting. But it tastes also without any frosting really really good!
Preheat oven to 350º F / 180 ° C. Core and grate pumpkin. I recommend using a food food processor. Saves you a lot of time. Mix dry ingredients in a large bow. Add butter, milk and pumpkin and mix it. Prepare baking pan with butter and flour. Add dough and bake for 45-50 minutes. Than, let the cake chill.
Well for the halloween topping I mixed powdered sugar with lemon juice. Actually I wanted to make a spiderweb. Well as you can see there is no spiderweb. I think I have other talents. Pretty sure. Making a spiderweb is not one of them. Hehe. I found these little pumpkins and spiders in the supermarket. Unfortunately they are not eatable. So it is not the perfect halloween topping but you get a little bit of a halloween feeling right?
