Vegan and refined sugar-free pancakes with lemon and blueberries

Vegane zuckerfreie Pancakes mit Zitrone und Blaubeeren

It was time for a new pancake recipe. I love pancakes and using a pancake maker, makes it super easy. For this recipe, I didn’t use refined sugar. Instead, I used dates and it worked perfectly.

Ingredients (serves 2)

  • 150 g wholemeal spelt flour
  • 50 g grounded oats
  • 6 dates (The amount depends on the type of date.)
  • 300 ml oat milk
  • 1 tsp baking powder
  • 1 lemon
  • 1 tbsp rapeseed oil


  • Coconut yoghurt
  • Date syrup
  • Blueberries


Soak the dates in hot water for 20 minutes. Then, blend the dates. I realized that the dates need less time for soaking when I used hot water.

Wash and dry lemon. Squeeze lemon and zest the lemon. You need 2 tablespoon lemon juice.

Mix flour, oats, baking powder, dates, lemon zest and oat milk in a big bowl and mix until smooth.

Heat a skillet over medium heat. Add oil. Reduce the heat to medium. Pour a heaping spoonful of pancake batter onto the hot pan and cook until bubbles form. Then flip and cook the other side. Or you use a pancake maker. Serve the pancakes with coconut yoghurt, date syrup and blueberries.
