Simple vegan potato soup with two different toppings

Simple vegane Kartoffelsuppe

Today there is finally a recipe again. A very simple vegan potato soup with two different topping ideas. The first one is with mushrooms, almonds and parsley and the second one contains vegan sausages (I like the vegan hot dog from Ikea best) and fried onions and also some parsley.

Ingredients vegan potato soup (2 servings)

500g potatoes
2 carrots
1 onion
1 teaspoon rapeseed oil
500 ml vegetable stock
½ teaspoon paprika powder, sweet
salt, pepper

Topping 1

250 g brown mushrooms
1-2 tablespoons chopped almonds (you can also use hazelnuts)
Parsley to garnish

Topping 2

2 vegan sausages
1 onion
1 teaspoon rapeseed oil
Parsley to garnish

Method

Peel potatoes and carrots and cut them into roughly sized cubes. Peel onion as well and cut into fine cubes.
Heat rapeseed oil in a pot and fry the onion briefly. Add carrots, potatoes and vegetable stock and simmer covered for 15 minutes on medium heat.

Add paprika powder and mash the vegan potato soup roughly with a blender. I like it when there are still a few pieces of vegetables in it. Season to taste with salt and pepper.

For the first topping, clean the mushrooms, cut them into slices and fry them briefly in a pan without oil. Then salt them a little bit. Pour potato soup into a bowl and garnish with mushrooms, nuts and parsley.

For the second topping, heat the vegan sausages and cut into slices. Peel and slice the onion. Heat rapeseed oil in a pan and fry the onion slices until golden brown. Garnish potato soup with sausages, onion and parsley.
