Unfortunately I started studying after six month again. Well I actually very happy with my situation. So no complaints here! So right now there is not much sun in Germany. But I didn’t give up hope yet. So I want to show you one of my absolute favorite salad recipe ever. It’s from my (german) cookbook. And to be honest I have been eating this salad for 3 weeks everyday! It is so so good. I love the combination of sweet and spicy. So here is the recipe:
Ingredients (serves 2)
Follow the instruction on the package to cook the rice. Use vegetable stock instead of water. Let the rice cool to room temperature. Wash the radishes, remove the stems and any long roots and slice them.
Wash and slice green onions. Than wash and chop chives. Wash, peel and dice the apple into little cubes. Place the radishes, chive and apple in a salad bowl. Add olive oil, balsamic vinegar, agave syrup, salt and pepper. Toss gently. Add the rice and toss again.
Cover and refrigerate at least 1 hour before serving.
