Mujaddara – vegan and glutenfree

Mujaddara vegan

ingredients (serves 2)

3 onions
3 tbsp olive oil
100 g german lentils
50 g brown rice
600 ml water
½ tsp cinnamon
½ tsp ground cumin
½ tsp nutmeg
½ tsp ground allspice
salt and pepper
¼ bunch parsley

 

Method

Peel the onions. Chop ½ onion. Dice the rest of the onions.

In a large pan heat 2 tbsp oil over medium-high heat. Add the diced onions and cook until the onions are dark golden brown

Put a saucepan on a medium heat and add 1 tbsp oil and the choped onion, then cook for around 3 minutes until soft and lightly golden. Add the lentils and the rice and cook it for 1 minute. Than, add water and the spicery and continue cooking until the lentils and rice are tender, about 40 minutes. Stir the lentil-rice mix every once in a while.

Spread the onions over the rice and lentil mixture to serve. Top it with parsley.

I highly recommend to eat it with hummus!

Consider the cooking time of the lentils and rice. If the cooking time is different. Than you can’t cook them together from the beginnen. Start with the lentils or with the rice. Depends on the cooking time!
