Glutenfree Pasta with peanut spinach sauce

glutenfreie Pasta mit Erdnuss-Spinat Soße


Ingredients (serves 1)

100 g glutenfree pasta
100 g fresh baby spinach
1 onion
1 tsp coconut oil
400 ml coconut milk
2 tbsp peanut butter (without sugar)
1 tsp vegetable stock (powder)
Salt and pepper



Follow the instruction on the package to cook the pasta. Wash the spinach and cut off the roots of the spinach.

Peel and chop onion. Put a saucepan on a medium heat and add oil and onion, then cook for around 3 minutes until soft and lightly golden.

Add coconutmilk, vegetable stock, peanut butter, salt and pepper, spinach. Continue cooking for around 5 minutes. Stir in the pasta.
