Another vegan and sugar-free cookie recipe. Still trying my best to avoid sugar. But what would Christmas be without the Christmas cookies??? So, I needed to create simple Christmas cookie recipes without using sugar, to get through Christmas time. And here it is: sugar-free chocolate cookies with caramel filling.
Ingredients dough (serves 1 baking tray)
Let the dates soak in water for at least 2 hours. Well, you can skip that step. But blending the dates works much better if there were soaked in water.
Preheat oven to 340º F / 170 ° C.
Mix hazelnuts, spelt flour, raw cacao powder and baking powder in a large bowl. Blend dates with 100 ml water and add the blended dates to the dry ingredients. Knead well. Add rapeseed oil and knead again.
Line a baking tray with baking paper. Put the dough between to sheets of baking paper and roll the dough out. Use a cookie cutter and cut out the cookies and place them on the cookie sheets. Bake for 8 minutes. Remove and cool on wire racks.
Blend dates with water. Add salt. Spread a generous amount of filling on the bottom of a cookie, sandwich it with another cookie. If you like you can melt some dark chocolate and top the cookies with it. But be careful. Mostly the chocolate contains a lot of sugar.
