I can’t get enough of sweet potatoes. Sweetpoatoe stew, sweet potato french fries, sweet potato brownies… the list is endless. Maybe because I just discovered sweet potatoes recently. So I have to try everything that you can cook with sweet potatoes. Well, today I have a recipe for baked sweet potato spaghetti with mango chilli dipping sauce. Happy cooking.



sweet potato spaghetti

2 sweet potatoes
1 tbsp rapeseed oil

mango chilli dipping sauce

1 garlic glove
1 tbsp rapeseed oil
1 mango
1 pinch of ginger (powdered)
1 pinch of chilli powder
1 tsp  agave syrup
3,5 oz orange juice
½ tsp aniseed (powdered)
½ tsp cloves (powdered)
½ tsp cinnamon
1 tsp balsamic vinegar (white)
Salt, pepper


Preheat oven to 410 F / 210° C. Line a baking sheet with baking paper. Peel the sweet potatoes and cut them into spaghetti with a spiralizer. Mix the spaghetti with salt and oil and put them on the baking sheet. Bake for 15-20 minutes.

Peel and chop garlic glove. Peel and dice mango.

Put a saucepan on a medium heat and add oil. Add garlic and let it cook for 2 minutes. Add mango, orange juice, ginger, agave, chilli, aniseed, cloves and cinnamon. Turn the heat down to medium and let it all cook for 10- 15 minutes. Then, blend the sauce add balsamic and season with salt and pepper. Boil the sauce for 1 minute again. Serve the sauce warm or cold.
