Banana bread – vegan

Bananenbrot vegan

 

ingredients

80 g coconut oil
3 bananas
5 tbsp coconut sugar
2 tsp baking powder
120 ml almond milk
400 g wholemeal spelt flour
300 g ground oats
1 vanilla pod
50 g walnuts
100 g desiccated coconut

 

Method

Melt the coconut oil. Smash the bananas with a fork.

Mix flour, oats, seeds scraped from 1 vanilla pod, sugar and baking powder in a mixing bowl. Stir milk, oil and bananas. Mix in the walnuts.

Put baking paper in a loaf pan (11 cm x 21 cm). Pour the batter into your prepared loaf pan. Bake for 50 minutes 175°C. Cool completely.

Slice the bread. Than, roll each slice in desiccated coconut.
