Finally, I am ready with my vegan & refined sugar-free ice cream recipes. Even though summer is almost over. It took me a while. I think I never tested a recipe that often like the vegan chocolate ice cream. I didn’t want to use frozen bananas and coconut milk. So, the texture was really a challenge.
I used an ice cream maker. If you don’t have on you can freeze it in your freezer. During the first four hours, you should stir the ice cream every 30 minutes to avoid ice crystals.

Slice banana and freeze at least for 24 hours. Blend frozen banana with oat milk. Add walnuts and homemade chocolate.
Vegan & Sugar-Free chocolate ice cream

Start by soaking the dates in a bowl with some water. Soak the dates for at least 4 hours (or overnight). Then, blend dates with some water. Put the butter in a pan on a low flame. When the butter starts to melt, swirl the butter in the melted butter to help the rest melting. Add oat cream, oat milk, raw cacao powder and blended dates. Stir well. Add guar flour and stir again and chill mix thoroughly. Pour cold ice cream mix into an ice cream maker.

(without banana & coconut milk)

Start by soaking the dates in a bowl with some water. Soak the dates for at least 4 hours (or overnight). Then, blend dates with some water.
Mix blended dates with oat cream, oat milk and peanut butter. Stir well. Pour ice cream mix into an ice cream maker. If you like you can add some homemade chocolate and/or some chopped peanuts after the ice cream is frozen.
