WHAT I EAT IN A DAY

I hope you enjoy my new “What I eat in a day”. The recipes are without refined sugar. That means I only use fresh or dried fruits to sweeten.

Breakfast

Like I wrote in the last food diary. I usually have oatmeal for breakfast. So, here is another oatmeal recipe.

Vegan chocolate porridge with cashew-fruit topping

Ingredients (serves 1)

½ Cup (50 grams) oats
1 ½ Cups (300 ml) oat milk
1-2 tsp raw cacao powder

Topping

1-2 tsp cashew butter
1 passion fruit
1 handful mini-apricots
1 handful blackberries

Method

Bring oat milk, oats and cacao powder in a medium saucepan to boiling. Reduce heat and simmer, uncovered, for 1 minute, stirring occasionally. Remove the pan from the heat. Top oatmeal with cashew butter, passion fruit, apricots and blackberries.

Lunch

I know vegan Mac’n’Cheese is not a new invention. But actually, I have never eaten vegan Mac’n’Cheese before. So, it is new to me. And because it is quite hot in Germany right now I am not in the cooking mood. This is the perfect recipe for me. It is tasty, and it is simple.

Vegan Mac’n’Cheese

Ingredients (serves 2)

1 Cup (100 grams) pasta (I used elbows)
Vegan cheese

Optional

Fresh parsley

Method

Follow the instruction on the package to cook the pasta. Here is the recipe for the vegan cheese sauce.
Chop parsley. Mix the cooked pasta with the hot vegan cheese sauce and top it with some parsley.

Dinner

I am pretty sure everybody knows this recipe. Honestly, I don’t think you can call it a recipe. Because it is too simple. But what is better than homemade French fries? Nothing? That’s what I am thinking.

Homemade French fries with avocado dip and fresh salad

Ingredients (serves 1)

1 big potatoes
1 sweet potato
1 avocado
6 date tomatoes
1 handful rocket
¼ cucumber
2 tsp balsamic (white)
Salt
Pepper

Method

Pre-heat the oven to 400º F / 200 ° C.
Peel and slice potatoes and the sweet potato into French fries. Place the French fries onto a baking tray lined with baking paper. Sprinkle with salt.
Bake for 35 minutes, or until golden brown and crispy. Don’t forget to flip them halfway through.
In a medium bowl, mash avocado. Mix in 2 washed and chopped tomatoes and season with salt.
Wash rocket, cucumber and the remaining tomatoes. Chop cucumber and half tomatoes. Mix rocket, cucumber and tomatoes with balsamic and season with salt and pepper.
