It is not a big secret when I am telling you that I don’t like summer. Even as a child I didn’t like summer. But I enjoy eating a lot of ice cream and delicious summer salads. So, I have an amazing recipe for you. A vegan watermelon salad with baked chickpeas. And if you a more into vegan ice cream I recommend cookie dough frozen yogurt.

Preheat oven to 350 F (180° C).
Wash chickpeas and dry well. Mix chickpeas with oil and salt. Line a baking sheet with baking paper. Put the chickpeas on the baking sheet and bake for 20 minutes.
Wash and spin-dry rocket. Peel and cut watermelon and avocado into little pieces. Wash and half tomatoes. Mix all ingredients in a big bowl except chickpeas.
Mix all ingredients together for the salad dressing. Season with salt and pepper. Top salad with the dressing and plate with baked chickpeas.
