Vegan raspberry muffins with oats

Who doesn’t like muffins? So, there is no muffin recipe on this blog. I can’t believe it. Definitely time for a vegan raspberry muffin recipe, right? Happy baking!

Ingredients (serves 6 big size, 12 normal size)

50 grams oats
200 gram spelt flour
80 grams coconut sugar
2 tsp baking powder
100 ml rapeseed oil
200 ml water (lukewarm)
150 grams raspberries (deep-frozen)


Preheat oven to 340º F / 170 ° C.

Mix dry ingredients in a large bowl. Add rapeseed oil and water and mix it. Then, add raspberries, stirring gently just to combine.

Fill 12 muffin liners (normal size) or 6 muffin liners (big size) to the brim. Bake for 25 minutes or until a toothpick comes out mostly clean.
