Vegan potato goulash (gluten free)

Today I have a super simple recipe for you guys. This vegan goulash tastes amazing. I cooked it on new years eve for the first time and my guests were thrilled. I recommend to cook the vegan goulash in the morning and to eat in the evening. Because the potato goulash tastes better after a few hours. You can eat it right away. Don’t worry. But like I said after a few hour it tastes even better. Like always I wish you happy cooking!

Ingredients (serves 2)

3 big potatoes (500 grammes) chopped
2 red bell pepper chopped
1 onion minced
1 tsp rapeseed oil
7 fl oz vegetable stock
1 can chopped tomatoes
½ tsp pepper (spice)
Salt
Pepper

Method

Add chopped onions to a cooking pot with some oil and fry until translucent. Add potatoes and bell pepper and fry for 1 minutes more. Now pour the vegetable stock and chopped tomatoes into the onion-potato mixture. Throw in the paprika powder and mix well. Cover and allow it to cook for about 30 minutes or until potatoes are soft. Add salt and pepper to taste. Let the vegan goulash sit for 1 hour.
