Because there were so many sweet recipes on my blog lately. It was time for some savoury recipe. Well, you don’t need to use pumpkin for this recipe. You can use all the vegetables you like. There are many options to make vegan quiche. But I don’t like tofu/soy very much, so I prefer using chickpea flour.
Ingredients dough (serves 5 mini-quiches)
Combine flour, margarine, salt and water in a large bowl. Mixing just until dough forms. Butter and flour the mini pie pans. Press your dough it into the pie pans, trimming any extra bits along the edges. Then chill in the refrigerator for at least 30 minutes.
Pre-heat the oven to 340º F / 170 ° C.
Remove pumpkin seeds and chop pumpkin. Chop the onion and broccoli. Slice the mushrooms. Peel and chop apple.
Combine chickpea flour, water and oatmeal in a large mixing bowl. Add garam masala, curry powder, turmeric, salt and pepper. Stir well. Add pumpkin, mushrooms, broccoli, onion and apple. Stir well, again.
Pour the mixed batter into the pie crust. And bake the mini-quiches for 20 minutes.
