A few weeks ago, a very close friend of mine got married. And what do you do at weddings? Of course, eating! And because I liked the main course: vegan curry with green asparagus and plums so much I had to cook it. It doesn’t taste completely like the original recipe. But it is very close. Actually, the course was served with tofu. But because I hate tofu I didn’t eat it and of course, I didn’t include it in this recipe. What do you think about tofu? Delicious or disgusting?
A few years ago I also didn’t like asparagus as well. But it changed. Two days I ago I cooked an asparagus soup and realised how delicious asparagus actually is.
Ingredients (serves 2)
Clean asparagus and cut off the woody ends. Bring a large pot of water to a strong boil. Toss in your entire bunch of asparagus. Let it cook for 8 minutes (medium heat).
Peel and chop onion and garlic glove. Peel plums and cut into little pieces.
Heat a saucepan over medium heat. Once hot, add the oil. Add the onions, plums, garlic and cook it for 1-2 minutes. Add vegetable stock, coconut milk and spicery. Let it cook for 5 minutes (medium heat).
Cut asparagus into pieces and add to the sauce. Let it cook for 2 minutes. Season with salt and pepper to taste and serves with rice.
