Muffins without sugar. When I baked them for the first time, I ate all 10 at once. Okay, they’re not very big. Instead of pineapple and coconut flakes, you can also use apples and cinnamon. It also tastes incredibly delicious.
Ingredients (10 muffins)
- 150 g spelt flour
- 1 tsp baking powder
- 1 tsp baking soda
- 40 g date sweetness (dried and ground dates)
- 1 tbsp rapeseed oil
- 150 – 200 ml oat milk
- 200 g pineapple
- 2 tsp coconut flakes
Mix spelt flour, baking powder, baking soda and date sweetener in a large bowl. Add coconut flakes, rapeseed oil and oat milk and stir until smooth. The dough should not be too liquid as the pineapple releases moisture during baking. Therefore, carefully add the oat milk.
Peel the pineapple and cut into small cubes and add to the dough. Mix everything again. Divide the dough into muffin moulds and bake in a preheated oven at 175° C for about 20-25 minutes.
